Ingredients
  1. 5 medium potatoes
  2. 4 eggs
  3. 1/4 small onion
  4. 1/4 cup sweet gherkins or sweet relish
  5. 1/4 cup mayo
  6. 1 Tablespoon sugar (optional)
  7. 1/2 Teaspoon yellow mustard
  8. salt
  9. Pepper
  10. Paprika
Instructions
  1. Place potatoes and eggs in 5 quart pan and cover with cold water.
  2. Heat on medium until potatoes are tender when poked with a fork (approximately 30 minutes)
  3. Remove from heat and drain potatoes and eggs and rinse with cold water to cool.
  4. Peel potatoes and eggs and cut into small cubes. Place in a large bowl.
  5. Finely chop onion and sweet gherkins (or sweet relish) and add to bowl.
  6. Add Mayo and mix. Note: mixture should be creamy but not runny. Add a small amount of the pickle juice and sugar to the potato mixture. Skip if using sweet relish.
  7. Add yellow mustard and mix.
  8. Add salt and pepper to taste.
  9. Sprinkle Paprika to garnish.
